In the food chain arise during the trade and processing of secondary flows. Causes are, for example: variations in cultivation and yield, changing demand, supply strategies, quality variations, grading and cutting. These are not yet optimally used because they are lost, they can be used for food. Despite its potential, its value to human consumption is limited.
An integrated chain approach is applied within this project. A group of 6 (SME) companies and organizations are working on the realization and valorization of high-quality applications of vegetable side and residual flows. Full valorization of the residual flow is paramount. The functionality for applications is based on the properties of residual flows (volumes, availability, quality) and on mild, sustainable technology for both the stabilization of the material and for processing into valuable applications. Experimented with on a lab scale, later scaling up to pilot level.
Various valorization options for different vegetables and food waste are analyzed using a tool. For example, we use the technology, properties of side and effects and possible applications of these products. The sustainability of value options is also determined.
