Can we reduce waste by valorizing vegetable & fruit waste streams?
That’s what we investigated together with our fellow project partners in FOX (Food Processing in a Box), a European collaborative research project. On September-26th we attended the final event and one of our partners shared the below video during their presentation to showcase how this could look like. In this specific video we demonstrate a pea (protein) case study.
