Until recently, the stems of oyster mushrooms mainly disappeared in animal feed. The company BeefyGreen, one of our partners, saw other opportunities and is now turning it into a tasty meat substitute. At the beginning of October, Frank Nouwens, founder of BeefyGreen, received a European prize in Stuttgart, Germany: the ‘Enterprise Europe Network Award 2021’, aimed at creative, innovative start-ups and SMEs.
Through the Food from Food project we became acquainted with Frank and his startup. The collaboration has even led to Frank being one of the ‘residents’ of our building. He tests recipes and produces the hybrid burgers in-house. Nice to see the development BeefyGreen has gone through. The crown on the work is a prestigious award.
