Verbruggen Mushrooms grows oyster mushrooms of very high quality in an organic way and is a real family business. In addition to the most famous oyster mushroom, the gray one, they also grow the yellow, pink and trumpet oyster mushroom. With more than 30 years of experience in growing mushrooms, Verbruggen knows how to produce an honest, top-quality product.
Verbruggen Mushrooms would like to use their oyster mushroom as fully as possible. Tests are therefore carried out to make full use of the entire fungus, up to and including the foot. There also seem to be plenty of options for the mycelium that remains.
Food Tech Brainport is enthusiastic about entrepreneurs who, even after years if not decades of doing business, get started with their product and/or their residual flow. The oyster mushroom foot is different from the oyster mushroom itself, but has fantastic properties for hybrid or vegetarian/vegan products. We have therefore been able to support Verbruggen Mushrooms in their process within the Food from Food project.
